    Gems with Fuyu Persimmon, Pomegranate, Crisp Garlic and Bleu Cheese Dressing

    There are so many different types of lettuce available at the Famers Market. One of my favorite type is called Little Gem. This particular lettuce is a buttery lettuce with great flavor and holds up well to the bleu cheese dressing used in this recipe.

    Gems with Fuyu Persimmon, Pomegranate, Crisp Garlic and Bleu Cheese Dressing

    Ingredients

    • Bleu cheese dressing
    • 1 cup buttermilk
    • 6oz. blue cheese
    • 1 garlic clove, minced
    • 1 shallot, minced
    • 1/4 cup extra-virgin olive oil
    • 2 1/2 Tbsp. red wine vinegar
    • 1 Tbsp. Worcestershire sauce
    • Kosher salt
    • Fresh ground black pepper
    • 3 little gem lettuce heads
    • Kosher salt

    • 1 fuyu persimmon
    • 1/4 cup pomegranate seeds
    • Crispy garlic

    Instructions

    1. To make the dressing:
    2. Combine all ingredients for the dressing into a food processor and pulse until combined. The dressing should have
    3. the consistency of pancake batter.
    4. Place the lettuce onto a serving platter, toss with some of the dressing, add persimmon, pomegranate, and garlic.
    5. Serve
