Corn cooks perfectly on the grill, the high heat allows the corn to become slightly charred, golden and brings out the natural sweetness. Most people will tell you to keep the corn in the husk while you grill it, and while this does work, I find that it can over cook the corn, and you lose some of the great flavor that grill can provide. Try this recipe at your next cookout.
- 6 ears corn, husked
- 3 tbsp. brown sugar
- 1 tsp. cayenne pepper
- kosher salt
- Freshly ground black pepper
- 1/4 c. melted butter
- Heat grill to high. Oil grates and add corn, grill, turning corn as needed, cook for 5 minutes
- Meanwhile, in a small bowl add brown sugar, cayenne, salt, pepper and butter. Whisk together until combined.
- Baste corn, while grilling, until totally slathered in sauce. Grill until charred and tender, 5 minutes more.
